Ingredients
  

Marinade Ingredients
  • 1/2 cup Olive oil For richness and to coat the chicken.
  • 1/4 cup Lemon juice For brightness and tang.
  • 2 cloves Garlic, minced
  • 1/2 cup Greek yogurt Helps tenderize the chicken.
  • 1 tablespoon Red wine vinegar For extra punch.
  • 1 teaspoon Oregano The signature gyro herb.
  • 1 teaspoon Paprika For color and warmth.
  • 1/2 teaspoon Cumin Adds depth to the flavor.
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
Gyro Assembly
  • 4 pieces Pita bread For wrapping the gyros.
  • 1 cup Tzatziki sauce Classic sauce for gyros.
  • 1 cup Chopped vegetables (cucumber, tomato, red onion) For crunch.
  • 1/2 cup Feta cheese or olives For a salty bite.
  • 1 cup Cooked chicken, sliced Fresh from cooking.

Method
 

Preparation
  1. In a bowl, whisk together olive oil, lemon juice, yogurt, vinegar, garlic, oregano, paprika, cumin, salt, and pepper.
  2. Put your chicken in a zip top bag or container, pour the marinade in, and toss to coat each piece.
  3. Marinate in the fridge for at least 30 minutes, or up to overnight.
Cooking
  1. Cook the chicken using a grill, skillet, or oven until browned and cooked through (165°F).
  2. Let the chicken rest for a few minutes before slicing.
Assembly
  1. Warm the pita or flatbread.
  2. Stuff with sliced chicken, tzatziki, chopped vegetables, and feta or olives.
  3. Serve immediately and enjoy.

Notes

For a lower carb option, serve the chicken with a big salad instead of pita. Prepare extra chicken for meal prep or wraps throughout the week.
