Preparation
- Preheat your oven to 325°F (163°C).
- In a mixing bowl, combine graham cracker crumbs, 1 tsp ground cinnamon, and melted butter. Press this mixture into the bottom of a springform pan.
- In another bowl, beat the softened cream cheese, 3/4 cup granulated sugar, and vanilla extract until smooth and creamy.
- Add the eggs, one at a time, mixing well after each addition. Stir in the sour cream until everything is well incorporated.
- Pour the filling over the crust and spread it out evenly.
Baking
- Bake in the preheated oven for about 60 minutes, or until the center is set and slightly jiggly.
- While it’s still warm, mix the 1/4 cup sugar with 1 tsp cinnamon, then sprinkle it over the cheesecake.
Cooling
- Let it cool to room temperature, then refrigerate for at least 4 hours before serving.
Notes
Slice with a warm knife for clean cuts. Serve plain or with a drizzle of chocolate, caramel, or fresh berries. A dollop of whipped cream or a scoop of vanilla ice cream pairs well.
