Ingredients
  

Crust
  • 1 1/2 cups graham cracker crumbs
  • 1 tsp ground cinnamon
  • 1/4 cup unsalted butter, melted
Filling
  • 24 oz cream cheese, softened Use room temperature for a smooth filling
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/4 cup sour cream
Topping
  • 1/4 cup additional sugar for topping
  • 1 tsp additional cinnamon for topping

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs, 1 tsp ground cinnamon, and melted butter. Press this mixture into the bottom of a springform pan.
  3. In another bowl, beat the softened cream cheese, 3/4 cup granulated sugar, and vanilla extract until smooth and creamy.
  4. Add the eggs, one at a time, mixing well after each addition. Stir in the sour cream until everything is well incorporated.
  5. Pour the filling over the crust and spread it out evenly.
Baking
  1. Bake in the preheated oven for about 60 minutes, or until the center is set and slightly jiggly.
  2. While it’s still warm, mix the 1/4 cup sugar with 1 tsp cinnamon, then sprinkle it over the cheesecake.
Cooling
  1. Let it cool to room temperature, then refrigerate for at least 4 hours before serving.

Notes

Slice with a warm knife for clean cuts. Serve plain or with a drizzle of chocolate, caramel, or fresh berries. A dollop of whipped cream or a scoop of vanilla ice cream pairs well.
