Ingredients
  

For the Blondie Batter
  • 2 large Eggs Use room temperature.
  • 2 1/4 cups All purpose flour
  • 1/2 tsp Baking soda
  • 1 1/4 cups light packed Brown sugar
  • 1 tbsp ground Cinnamon
  • 1 tsp Cream of tartar
  • 3/4 cup Granulated sugar
  • 1/2 tsp Salt
  • 2 tsp Vanilla extract
  • 1 1/8 cup unsalted Butter Use room temperature.
For the Topping
  • 2 tbsp Granulated sugar mixed with 1/2 tsp Cinnamon For topping.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. In a large bowl, cream together the unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, cream of tartar, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour half of the batter into the prepared baking dish and spread evenly.
  7. Sprinkle the sugar and cinnamon mixture over the batter.
  8. Dollop the remaining batter on top and swirl gently with a knife.
Baking
  1. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let cool in the pan before slicing into bars.

Notes

For a stronger cinnamon taste, consider adding more cinnamon to the swirl mix.
