Ingredients
  

Chicken and Marinade
  • 3 lbs chicken pieces (drumsticks, thighs, breasts) Use your preferred combination of chicken pieces.
  • 2 cups buttermilk Marinate chicken for at least 2 hours, preferably overnight.
Flour Coating
  • 2 cups all-purpose flour
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
Frying
  • Oil for frying Use enough oil for deep frying.

Method
 

Preparation
  1. Tenderize your chicken by marinating it in buttermilk for at least 2 hours, or overnight for best results.
  2. While the chicken is marinating, mix together flour, salt, black pepper, paprika, garlic powder, and onion powder in a large bowl.
Cooking
  1. Heat oil in a deep frying pan over medium heat.
  2. Dredge the marinated chicken in the flour mixture until well coated.
  3. Fry the chicken in batches for about 12-15 minutes on each side, or until it’s golden brown and reaches an internal temperature of 165°F.
  4. Place the fried chicken on paper towels to drain excess oil and serve hot.

Notes

Serve hot with simple sides like mashed potatoes, coleslaw, biscuits, or green beans. Store in an airtight container in the fridge for up to 3 days. Reheat in an oven at 350°F until hot and crispy again. For less oil, consider baking the chicken instead.
