Preparation
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced chicken and season it with salt and pepper. Cook for about 6-8 minutes until browned and cooked through.
  3. Toss in the broccoli florets and chopped bell pepper, and sauté for 3-4 minutes.
  4. Stir in the coconut milk and soy sauce, and let it all simmer for another 5 minutes.
  5. Spoon the chicken and vegetable medley over the cooked rice and garnish with fresh cilantro.

Notes
