Ingredients
  

Dip Ingredients
  • 10 oz Frozen chopped spinach, thawed and squeezed dry Make sure it's well drained to avoid watery dip.
  • 1 cup Sour cream Can be replaced with reduced fat for lighter option.
  • 1 cup Mayonnaise Use full-fat or light version based on preference.
  • 1 packet Knorr vegetable recipe mix or favorite veggie soup mix This adds flavor without much effort.
  • 1 small can Water chestnuts, drained and chopped Optional for added crunch.
  • 2-3 Green onions, sliced Adds freshness and flavor.
  • 1/2 teaspoon Garlic powder Optional for extra flavor.
  • Black pepper Add a few twists to taste.

Method
 

Preparation
  1. Squeeze the spinach really well using a clean kitchen towel or paper towels until it's not dripping.
  2. In a medium bowl, combine sour cream, mayonnaise, and the veggie mix packet until smooth.
  3. Fold in the squeezed spinach, chopped water chestnuts, and green onions. Optional: add garlic powder and pepper.
Chilling
  1. Cover and refrigerate for at least 2 hours, preferably overnight, for best flavor.
  2. Before serving, give it a stir and taste. Adjust seasoning if necessary.

Notes

This dip is perfect for parties and can be served with a variety of dippers such as tortilla chips, pita chips, or fresh veggies. Keep in mind to serve it cold and even nest the bowl in ice if necessary to maintain temperature.
