Ingredients
  

Wet Ingredients
  • 2 large Eggs Use room temperature for better mixing.
  • 1 cup Cottage cheese, full-fat or low-fat Full-fat provides richer flavor.
  • 1 tsp Vanilla extract Adds sweetness and flavor.
Dry Ingredients
  • 1/2 cup Oat flour Can grind rolled oats for this.
  • 1/2 tsp Baking powder Leavening agent for fluffiness.
  • 1/4 tsp Salt
  • 2 tbsp Sweetener, Granulated Adjust to taste.
For Cooking
  • 1 Cooking spray or butter For greasing the skillet.
Optional Add-ins
  • 1/4 cup Blueberries, chocolate chips, or chopped nuts Fold in before cooking.

Method
 

Preparation of Wet Mixture
  1. In a mixing bowl, combine eggs, cottage cheese, and vanilla extract until well blended.
Preparation of Dry Mixture
  1. In another bowl, mix oat flour, baking powder, salt, and sweetener.
Combine Mixtures
  1. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Add Optional Ingredients
  1. If desired, fold in optional add-ins like blueberries, chocolate chips, or nuts.
Cooking Pancakes
  1. Heat a non-stick skillet over medium heat and lightly grease with cooking spray or butter.
  2. Pour batter onto the skillet to form pancakes of desired size.
  3. Cook for 3-4 minutes on each side, or until golden brown.
Serving
  1. Serve warm with toppings of your choice.
