Preparation
- Preheat the oven to 425°F (218°C).
- In a large bowl, stir together flour, baking powder, sugar, and salt.
- Add the cold butter and work it in until the mixture resembles coarse crumbs with some pea-sized pieces.
- Pour in the cold milk and stir gently until just combined. If the mixture looks too dry, add a splash more milk.
- Turn the dough onto a lightly floured surface and pat it into a rectangle about 1 inch thick. Fold it in half, then pat it down again. Repeat this process one or two more times.
Baking
- Cut biscuits using a biscuit cutter or a glass, cutting straight down without twisting the cutter.
- Place biscuits on a baking sheet and bake for 12 to 15 minutes, or until they are tall and golden.
- Optional: Brush the tops with melted butter for an extra flavor and appearance.
Notes
Serve these biscuits warm with butter and jam or alongside hearty meals. They can be refrigerated before baking and frozen both unbaked and baked.
