  • 2-3 cups cooked chicken, shredded or chopped
  • 1 can cream of chicken soup or homemade if you have it
  • 1 cup sour cream or plain Greek yogurt
  • 1.5 cups frozen mixed veggies
  • 0.5 cups chicken broth
  • to taste salt, pepper, garlic powder
  • 1 tube biscuit dough or biscuit mix
Cheesy Taco Rice Casserole
  • 2 cups cooked rice Day-old rice is better for fluffiness
  • 1 pound ground beef or turkey browned with taco seasoning and onion
  • 1 can black beans
  • 1 cup corn
  • 1 cup salsa
  • 1 cup cheese for topping
Cozy Broccoli Mac and Cheese Casserole
  • 2 cups pasta boil until just barely tender
  • 1 cup milk warm
  • 2 cups shredded cheddar cheese freshly shredded preferred
  • 0.5 cups cream cheese optional for creaminess
  • to taste salt, pepper, and mustard powder
  • 2 cups steamed broccoli
  • 1 cup buttered breadcrumbs or crackers for topping

Creamy Chicken and Biscuit Casserole
  1. Heat oven to 375 F and lightly grease a casserole dish.
  2. Stir soup, sour cream, broth, seasonings, chicken, and veggies in a bowl.
  3. Spread it into the dish and top with biscuits.
  4. Bake about 25 to 35 minutes until bubbly and the biscuits are cooked through.
  5. Tip: If the biscuits brown too fast, lightly tent with foil for the last 10 minutes.
Cheesy Taco Rice Casserole
  1. Cook your rice first. Day old rice is even better because it stays fluffy.
  2. Brown ground beef or turkey with taco seasoning and a little onion.
  3. Mix in black beans, corn, salsa, and cooked rice.
  4. Top with cheese and bake until hot and melty.
Cozy Broccoli Mac and Cheese Casserole
  1. Boil pasta until just barely tender, then drain.
  2. Warm milk and stir in shredded cheddar (and a little cream cheese if you want extra creamy).
  3. Add salt, pepper, and a pinch of mustard powder if you have it.
  4. Fold in steamed broccoli and pasta, pour into a dish.
  5. Top with buttered breadcrumbs or crackers and bake until golden.
  6. Tip: Shred your own cheese if you can. Pre-shredded works, but freshly shredded melts smoother.

Notes

Let the dish rest for 10 minutes after baking to thicken up and slice cleaner. Perfect for busy weeks and comforting dinners.
