  • 8 ounces pasta (such as rotini or penne)
  • 1 cup cream cheese, softened Using full-fat will create a rich texture.

  • 1 cup shredded cheddar cheese
  • 1 cup cooked bacon, crumbled
  • 1 packet ranch seasoning mix Opting for a fresh seasoning mix will enhance the flavor.
  • 1/2 cup chicken broth
  • to taste Salt and pepper
  • to taste Chopped green onions for garnish For a fresh pop of flavor and color.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Cook the pasta according to package instructions; drain.
  3. In a large bowl, combine the shredded chicken, cream cheese, sour cream, ranch seasoning mix, chicken broth, and cooked bacon. Mix thoroughly until creamy and well-blended.
  4. Stir in the cooked pasta and half of the cheddar cheese.
  5. Transfer the mixture into a greased casserole dish and spread evenly.
  6. Top with the remaining cheddar cheese.
  7. Bake for 25-30 minutes, until bubbly and golden on top.
  8. Garnish with chopped green onions before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 4 days. For longer storage, freeze the casserole for up to 3 months. Reheat in the oven to maintain texture.
