Ingredients
  

For the Cajun Chicken
  • 2 large chicken breasts Look for organic and free-range for enhanced flavor.
  • 1 tbsp olive oil
  • 1 tsp Cajun seasoning Plus another 1 tsp for the sauce.
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt Use sparingly to avoid overpowering flavor.
  • 1/2 tsp black pepper
  • 2 tbsp butter Consider garlic-infused for extra flavor.
  • 3 cloves garlic, minced
  • 1 cup heavy cream Can substitute with coconut milk for dairy-free.
  • 1/2 cup chicken broth
  • 1/2 cup Parmesan cheese, grated May substitute with nutritional yeast for vegan.
  • 1/2 tsp chili flakes For an added kick.
  • 1 tbsp chopped parsley For garnish.
For the Crispy Fries
  • 4 large potatoes, cut into thin fries Soak in cold water for 30 mins for crispiness.
  • 2 tbsp vegetable oil
  • 1 tsp salt Use for seasoning the fries.
  • 1 tbsp chopped parsley, for garnish
  • 1/2 tsp chili flakes, for garnish

Method
 

Preparation
  1. Season the chicken by coating it with Cajun seasoning, paprika, garlic powder, salt, and pepper.
  2. Toss the cut potatoes in vegetable oil and salt until evenly coated.
Cooking
  1. Spread the fries on a baking sheet and bake at 425°F (220°C) for 30-35 minutes until golden brown.
  2. In a hot skillet with olive oil, sear the seasoned chicken for 5-6 minutes on each side until golden brown.
  3. In the same skillet, melt butter and sauté minced garlic until fragrant, then add chicken broth, heavy cream, Parmesan, Cajun seasoning, and chili flakes. Simmer until thickened.
Serving
  1. Place a chicken breast on each plate, top with creamy sauce, and serve the fries on the side.
  2. Garnish with chopped parsley and chili flakes.

Notes

Creamy Cajun Chicken pairs well with a fresh salad or steamed vegetables. For a lighter version, swap chicken for firm tofu and use almond milk.
