Preparation
- Preheat your oven to 400°F (200°C).
- In a bowl, coat the chicken drumsticks with olive oil, minced garlic, oregano, parsley, paprika, salt, and pepper.
- Place the seasoned chicken on a baking sheet and roast for 35–40 minutes.
- Meanwhile, boil the potatoes in salted water until tender, about 15–20 minutes.
- Drain well and mash the potatoes with butter and milk until creamy.
- In a skillet, sauté or roast the baby carrots with butter, garlic, and parsley until tender.
Serving
- Plate and serve the chicken with mashed potatoes and glazed carrots.
- Optionally, add extra garlic butter for enhanced flavor.
Notes
Store leftovers in an airtight container for up to three days. For freezing, use a freezer-safe container for up to three months. Reheat in the oven at 350°F until warmed through.
