  • 1 tsp dried parsley For added flavor in the chicken seasoning.
  • 1 tsp dried oregano Enhances the dish with herbal notes.
  • 1/2 tsp paprika Adds a smoky flavor.

  • 1 tsp salt Essential for seasoning the chicken.
  • 1/4 cup milk Add gradually for creamy mashed potatoes.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, coat the chicken drumsticks with olive oil, minced garlic, oregano, parsley, paprika, salt, and pepper.
  3. Place the seasoned chicken on a baking sheet and roast for 35–40 minutes.
  4. Meanwhile, boil the potatoes in salted water until tender, about 15–20 minutes.
  5. Drain well and mash the potatoes with butter and milk until creamy.
  6. In a skillet, sauté or roast the baby carrots with butter, garlic, and parsley until tender.
Serving
  1. Plate and serve the chicken with mashed potatoes and glazed carrots.
  2. Optionally, add extra garlic butter for enhanced flavor.

Notes

Store leftovers in an airtight container for up to three days. For freezing, use a freezer-safe container for up to three months. Reheat in the oven at 350°F until warmed through.
