  • 1 lb chicken breast, diced
  • 12 oz penne pasta, cooked and drained
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese Use freshly grated for best flavor
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, drizzle in the olive oil and cook the diced chicken over medium heat until it’s no longer pink and nicely browned.
  3. Toss in the minced garlic and sauté for another minute.
  4. In a large bowl, mix together your cooked pasta, chicken, heavy cream, chicken broth, Parmesan cheese, Italian seasoning, salt, and pepper until well combined.
Baking
  1. Pour the creamy pasta mixture into a greased baking dish and sprinkle the shredded mozzarella cheese on top.
  2. Bake in the oven for about 25-30 minutes or until the cheese is bubbling and golden brown.
  3. Let it cool slightly before serving.

Notes

For variations, consider adding cooked spinach or peas, swapping penne for fusilli, or incorporating cooked bacon for a smoky flavor. For a lighter version, use half heavy cream and half milk.
