  • 1 tbsp honey
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
For the Creamy Rice
  • 2 cups cooked long-grain rice
  • 1 cup broccoli florets, chopped
  • 1/2 cup sweet corn kernels
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup heavy cream
  • 1 tbsp butter
  • 1 tbsp chopped parsley
For the Coleslaw
  • 1 cup shredded cabbage
  • 1 cup shredded carrots
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice

Preparation
  1. In a medium bowl, combine olive oil, honey, paprika, garlic powder, onion powder, salt, and black pepper. Mix until well blended. Coat the chicken drumsticks evenly and let them marinate for 30 minutes.
Cooking the Chicken
  1. Preheat your oven to 400°F (200°C). Place the marinated chicken on a baking sheet and roast for 40-45 minutes, turning halfway through until the skin is golden and crispy.
Preparing the Creamy Rice
  1. While the chicken roasts, melt butter in a skillet over medium heat. Add the broccoli, spinach, and corn, sautéing until tender. Stir in the heavy cream and mozzarella cheese with the cooked rice until everything is well combined and creamy.
Making the Sides
  1. In a large bowl, toss together the shredded cabbage and carrots with mayonnaise, lemon juice, salt, and pepper.
Assembly
