- Rub the spice mixture all over the chicken leg quarters.
Cooking
- Place the well-seasoned chicken in a roasting pan and bake for 40–45 minutes.
- Meanwhile, slice the potatoes into thick shapes, season them, and bake or fry until crispy.
Assembly
- Combine the sliced red onion, chopped parsley, lemon juice, and seasoning in a bowl.
- Slice the fresh tomatoes.
- Arrange the roasted chicken, crispy fries, fresh tomato slices, and onion salad on a wide platter. Add a creamy yogurt dip on the side.
Notes
Marinate chicken overnight for enhanced flavor. For crispier fries, soak in cold water for 30 minutes before cooking.
