Ingredients
  

For the Chicken
  • 2 whole whole chicken leg quarters Look for fresh chicken with firm skin.
  • 2 tbsp olive oil Can substitute with spray oil for a lighter version.
  • 2 tbsp paprika Smoked paprika can be used for richer flavor.
  • 1 tbsp garlic powder
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp chili flakes Add extra for a spicier version.
  • 1 tsp salt
For the Sides
  • 2 large potatoes Cut into fries; using waxy varieties yields crispier results.
  • 2 fresh tomatoes Sliced for serving.
  • 1/2 red onion red onion Thinly sliced.
  • 1/4 cup parsley Chopped for garnish.
  • 1/2 cup plain yogurt or garlic mayo Coconut yogurt can be used for a dairy-free option.
  • 1 tsp lemon juice

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix olive oil, paprika, garlic powder, onion powder, oregano, chili flakes, salt, and black pepper to create a paste.
  3. Rub the spice mixture all over the chicken leg quarters.
Cooking
  1. Place the well-seasoned chicken in a roasting pan and bake for 40–45 minutes.
  2. Meanwhile, slice the potatoes into thick shapes, season them, and bake or fry until crispy.
Assembly
  1. Combine the sliced red onion, chopped parsley, lemon juice, and seasoning in a bowl.
  2. Slice the fresh tomatoes.
  3. Arrange the roasted chicken, crispy fries, fresh tomato slices, and onion salad on a wide platter. Add a creamy yogurt dip on the side.

Notes

Marinate chicken overnight for enhanced flavor. For crispier fries, soak in cold water for 30 minutes before cooking.
