Ingredients
  

Seafood
  • 5 oz Lobster meat Thawed if previously frozen.
  • 5 oz Lump crab Thawed if previously frozen.
  • 1 lb Shrimp Thawed if previously frozen.
Beans and Vegetables
  • 1 can Black beans Drained and rinsed.
  • 1/2 cup Corn, whole kernel frozen
  • 2 cloves Garlic Minced.
  • 1 can Great northern beans Drained and rinsed.
  • 1 cup Onion Chopped.
  • 2 cups Chicken broth, low sodium To control salt levels.
  • 1 can Tomatoes with chilis Choose mild or hot based on preference.
Dairy and Additional Ingredients
  • 1 tsp Olive oil For sautéing.
  • 1 cup Colby and monterey jack cheese Shredded, for topping.
  • 3 oz Cream cheese For creaminess.

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and minced garlic; sauté until softened.
Cooking
  1. Stir in the black beans, corn, great northern beans, chicken broth, and tomatoes with chilis.
  2. Bring to a simmer and cook for about 10 minutes.
  3. Add in the seafood (lobster, crab, and shrimp) and let it cook through.
  4. Reduce heat to low and stir in the cream cheese until melted and mixed.
  5. Finally, sprinkle the cheese on top and let it melt before serving.

Notes

Serve hot in bowls. Add extra shredded cheese if desired. Consider offering warm bread or crackers on the side, and a squeeze of lime or chopped herbs for brightness.
