- In a large pot, heat olive oil over medium heat.
- Add chopped onion and minced garlic; sauté until softened.
Cooking
- Stir in the black beans, corn, great northern beans, chicken broth, and tomatoes with chilis.
- Bring to a simmer and cook for about 10 minutes.
- Add in the seafood (lobster, crab, and shrimp) and let it cook through.
- Reduce heat to low and stir in the cream cheese until melted and mixed.
- Finally, sprinkle the cheese on top and let it melt before serving.
Notes
Serve hot in bowls. Add extra shredded cheese if desired. Consider offering warm bread or crackers on the side, and a squeeze of lime or chopped herbs for brightness.
