  • 4 pieces Chicken breasts, boneless skinless
  • 1 tsp Basil, dried
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Oregano, dried
  • 2 pieces Eggs, large
  • 1/2 tsp Black pepper
  • 1/2 tsp Salt
  • 1 spray Olive oil spray
  • 1 cup Italian-style breadcrumbs
  • 2 tbsp Milk
  • 1 cup Parmesan cheese, grated

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix together the dried basil, garlic powder, onion powder, oregano, black pepper, and salt.
  3. In another bowl, whisk the eggs and milk together.
Coating
  1. Dip each chicken breast in the egg mixture, then coat with the breadcrumb mixture, followed by grated Parmesan cheese.
  2. Place the coated chicken breasts on a baking sheet lined with parchment paper, and spray lightly with olive oil.
Baking
  1. Bake for 25-30 minutes or until the chicken is cooked through and golden brown.
Serving
  1. Serve hot with your choice of pasta, salad, or vegetables.

Notes

Pound the chicken to an even thickness for even cooking. Use a light spray of olive oil to help browning. Let the chicken rest for 3-5 minutes post baking to retain juiciness.
