  • 1 can Black beans Drain and rinse to reduce sodium.
  • 1 bunch Fresh Cilantro Choose fresh cilantro with no yellow leaves.
  • 1 teaspoon Chili powder Adjust to taste for spice level.
  • to taste none Salt and pepper For seasoning.
  • 1 tablespoon Olive oil Use cold-pressed for better flavor.
  • 1 teaspoon Cumin For flavor enhancement.
  • 8 pieces Gluten-free Corn tortillas Fresh tortillas preferred.
  • 1 cup Pepper jack cheese Grate fresh for better melting.
  • to serve none Sour cream or vegan alternative For serving.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat the olive oil over medium heat.
  3. Add the black beans, chili powder, cumin, salt, and pepper. Cook until heated through, about 5 minutes.
  4. Take the corn tortillas and fill each with the black bean mixture and a sprinkle of pepper jack cheese.
  5. Fold the tortillas and place them on a baking sheet.
Baking
  1. Bake for 15-20 minutes, or until the tacos are crispy and the cheese has melted.
Serving
  1. While the tacos are baking, prepare the cilantro lime sauce by mixing chopped cilantro with lime juice, salt, and olive oil to taste.
  2. Serve the crispy black bean tacos hot with a dollop of sour cream or a vegan alternative and drizzle with cilantro lime sauce.

Notes

To keep shells crispy when reheating, use the oven instead of the microwave. Store tacos separately from the sauce.
