Ingredients
  

For the Chicken Patties
  • 1 lb ground chicken Opt for high-quality ground chicken.
  • 1 large egg
  • 1/2 cup breadcrumbs Use plain or seasoned based on preference.
  • 2 cloves garlic, minced For added flavor.
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • to taste salt & black pepper
  • 1 tbsp olive oil For frying.
For the Pasta
  • 2 cups shell pasta
For the Salad
  • 1 cucumber, diced
  • 1 tomato, chopped
  • 1/2 yellow bell pepper, chopped
  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1 tbsp fresh dill, chopped
  • 2 tbsp Greek yogurt or light dressing For dressing the salad.

Method
 

Preparation
  1. In a large bowl, combine ground chicken, egg, breadcrumbs, minced garlic, paprika, onion powder, salt, and pepper until thoroughly mixed.
  2. Shape the mixture into round patties, about palm-sized and a half-inch thick.
Cooking
  1. Heat olive oil in a skillet over medium heat. Add the patties and cook for 4-5 minutes per side, or until golden brown and crispy.
  2. While the patties are cooking, bring a pot of salted water to a boil, add shell pasta, and cook for 8-10 minutes until tender. Drain and set aside.
Salad Preparation
  1. In a large bowl, combine diced cucumber, chopped tomato, yellow bell pepper, sliced red onion, crumbled feta, dill, and Greek yogurt (or dressing). Toss until well-coated.
Assembly
  1. Serve the pasta topped with 2-3 chicken patties and a colorful helping of salad on the side.

Notes

For best results, use fresh vegetables and high-quality chicken. Substitute ground chicken with turkey for a leaner option or use gluten-free breadcrumbs as needed.
