Ingredients

For the chicken tenders
  • 4 pieces chicken breasts Look for organic or free-range options.
  • 2 2/3 cups soybean oil for frying
For the breading
  • 1 cup flour
  • 2 cups cornstarch Split into two portions for wet batter and dry breading.
  • 1 Tbsp garlic salt
  • 2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp baking powder
  • 1/2 tsp cayenne pepper
  • 2 Tbsp brown sugar
  • 1 tsp salt
For the wet batter
  • 3/4 cup water
  • 2 pieces eggs

Method

Preparation
  1. Cut each chicken breast into 4-6 strips.
  2. Prepare the dry breading mixture in one bowl and the wet batter (eggs and water) in another bowl, whisking the wet mixture until smooth.
Breading and Frying
  1. Dip chicken strips into the dry breading, coating thoroughly.
  2. Dip the breaded chicken into the wet batter and shake off excess.
  3. Return the chicken to the dry breading for a second coating.
  4. Heat the soybean oil to 350°F.
  5. Fry chicken strips in small batches for about 6 minutes or until golden brown.
  6. Transfer cooked tenders to paper towel-lined plate to drain excess oil.

Notes

Serve with honey mustard or barbecue sauce. For a lighter option, bake the chicken tenders instead of frying.
