  • 1 lb baby potatoes Choose potatoes that are smooth and uniform in size.
  • 1 bunch fresh asparagus, trimmed Ensure asparagus is fresh and crisp.
  • 1 cup shredded mozzarella cheese Use freshly shredded for better melting.
Garlic Butter Sauce
  • 2 tbsp butter Can be substituted with olive oil for a dairy-free option.
  • 3 cloves garlic, minced Freshly minced garlic enhances flavor.
  • 1 tbsp honey
  • 1 tbsp lemon juice Fresh lemon juice is best.
  • 1 tsp paprika
  • 1 tbsp fresh parsley, chopped For garnish.
Seasoning for Potatoes
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried Italian seasoning

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss baby potatoes with olive oil, garlic powder, Italian seasoning, salt, and pepper.
  3. Spread the seasoned potatoes on a baking sheet in a single layer.
  4. Arrange asparagus on a separate baking sheet, drizzle with olive oil, and season.
  5. Melt butter in a small pan, then add minced garlic and other sauce ingredients, cooking until fragrant.
Cooking
  1. Roast the potatoes for 30–35 minutes until golden-brown and tender.
  2. Bake asparagus for 10 minutes, then add mozzarella cheese and bake for another 5 minutes.
  3. Sear the salmon fillets for 4–5 minutes per side in a hot skillet, brushing with garlic butter.
  4. On a serving plate, arrange roasted potatoes, cheesy asparagus, and salmon, drizzling with extra garlic butter.

Notes

For a lighter option, substitute butter with avocado oil and reduce cheese. Consider marinating salmon for added flavor.
