Ingredients
  

For the Chicken
  • 3 pieces chicken drumsticks Opt for organic if possible.
  • 2 tablespoons olive oil For seasoning the chicken.
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • Salt & black pepper to taste
For the Vegetable Rice
  • 2 cups cooked basmati rice Fluffy and mixed with vegetables.
  • 1 cup corn kernels
  • 2 cups spinach, chopped
  • 1 cup broccoli florets, chopped
  • 1 cup shredded carrots
  • 1 cup cabbage, shredded
  • 2 tablespoons butter Used for sautéing.
  • 3 cloves garlic, minced For sautéing with vegetables.
For the Slaw
  • 2 tablespoons mayonnaise Consider gluten-free or vegan option.
  • 1 tablespoon lemon juice
  • Salt & black pepper to taste
For Garnish
  • Fresh parsley for garnish Adds color and freshness.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, coat the chicken drumsticks with olive oil, paprika, garlic powder, onion powder, oregano, salt, and pepper.
  3. Let the chicken marinate for at least 15 minutes.
Baking the Chicken
  1. Place the seasoned drumsticks on a baking tray lined with parchment paper.
  2. Bake for 35–40 minutes until golden brown and crispy, brushing with garlic butter halfway through.
Cooking the Vegetables
  1. Melt butter in a skillet over medium heat.
  2. Add garlic, spinach, broccoli, and corn, sautéing until greens are wilted.
  3. Fold in the cooked basmati rice and stir until heated through.
Preparing the Slaw
  1. Mix shredded carrots and cabbage with mayonnaise, lemon juice, salt, and pepper.
Serving
  1. Create a bed of creamy veggie rice on each plate, add corn on the side, and place the garlic herb chicken on top.
  2. Garnish with fresh parsley before serving.

Notes

For a complete meal, serve with a light garden salad or roasted potatoes. Chicken can be marinated overnight for richer flavor. Separate elements for meal prep.
