Preparation
- Preheat the oven to 400°F (200°C).
- In a large bowl, coat the chicken drumsticks with olive oil, paprika, garlic powder, onion powder, oregano, salt, and pepper.
- Let the chicken marinate for at least 15 minutes.
Baking the Chicken
- Place the seasoned drumsticks on a baking tray lined with parchment paper.
- Bake for 35–40 minutes until golden brown and crispy, brushing with garlic butter halfway through.
Cooking the Vegetables
- Melt butter in a skillet over medium heat.
- Add garlic, spinach, broccoli, and corn, sautéing until greens are wilted.
- Fold in the cooked basmati rice and stir until heated through.
Preparing the Slaw
- Mix shredded carrots and cabbage with mayonnaise, lemon juice, salt, and pepper.
Serving
- Create a bed of creamy veggie rice on each plate, add corn on the side, and place the garlic herb chicken on top.
- Garnish with fresh parsley before serving.
Notes
