Ingredients
  

For the Chicken
  • 6 pieces chicken drumsticks Look for fresh, high-quality drumsticks.
  • 2 tbsp olive oil Opt for high-quality olive oil for better flavor.
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • 1/2 tsp black pepper
  • 1 tsp salt
For the Fries
  • 4 large potatoes, cut into fries Choose firm potatoes for the best texture.
For the Salad
  • 2 cups mixed lettuce
  • 1 cup cucumber slices
  • 1 cup cherry tomatoes
  • 1/4 piece red onion, sliced into rings
  • 1/4 cup chopped parsley For garnish
For the Dressing
  • 1/2 cup mayonnaise Can substitute with vegan mayo.
  • 1 tsp garlic powder
  • 1 tbsp lemon juice
  • 1/2 cup ketchup

Method
 

Preparation
  1. In a large bowl, combine the olive oil, paprika, garlic powder, onion powder, parsley, salt, and pepper. Mix until well combined.
  2. Coat the chicken drumsticks in the marinade thoroughly and let them marinate for at least 30 minutes.
Cooking
  1. While the chicken marinates, heat vegetable oil in a deep pan or air fryer. Fry the potato fries until they turn a golden brown.
  2. Once the fries are cooked, preheat your grill to medium heat and grill the marinated drumsticks for 25-30 minutes, turning occasionally until they reach an internal temperature of 165°F.
Assembly
  1. Arrange mixed lettuce, cucumber slices, cherry tomatoes, and red onion rings on a platter.
  2. Prepare the dip by mixing the mayonnaise, garlic powder, and lemon juice until smooth.
  3. On a large serving plate, arrange the grilled chicken beside the crispy fries and fresh salad. Garnish with chopped parsley and serve with ketchup and garlic dip on the side.

Notes

This dish can be stored in the fridge for up to three days in an airtight container. Leftovers can be frozen for about three months.
