Ingredients
  

For the chicken marinade
  • 6 pieces chicken drumsticks Opt for organic or free-range for best flavor.
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp turmeric
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tbsp lemon juice
For the fries
  • 4 large potatoes, cut into thick fries Starchy varieties like Russets are best.
  • 2 tbsp vegetable oil
  • Salt to taste salt
For the sautéed vegetables
For the spicy tomato sauce
  • 1/2 cup tomato sauce
  • 1 clove garlic, minced
  • 1/2 tsp paprika
  • Pinch chili flakes

Method
 

Preparation
  1. In a large bowl, combine the olive oil, paprika, garlic powder, onion powder, turmeric, black pepper, salt, and lemon juice. Ensure each drumstick is thoroughly coated.
  2. Marinate the chicken for at least 30 minutes, or longer for deeper flavor.
Cooking
  1. Preheat your grill or oven to 400°F (200°C). Place the chicken on the grill or a baking sheet and cook for 35-40 minutes until it’s crispy and the juices run clear.
  2. In a frying pan, heat vegetable oil on medium-high heat. Add the thick-cut potatoes and fry until they turn golden brown and crispy, about 10-15 minutes.
  3. In another pan, heat a little olive oil and add the sliced bell peppers and onion. Sauté until soft and translucent, about 8-10 minutes.
  4. In a small bowl, combine the tomato sauce, minced garlic, paprika, and chili flakes. Mix well and set aside.
Serving
  1. Plate the grilled chicken, crispy fries, and sautéed vegetables together. Drizzle the prepared spicy tomato sauce over the chicken.
