  • 3 pieces chicken drumsticks Choose organic or free-range for better flavor.
  • 2 tbsp olive oil For coating the chicken.

  • 1 tsp dried oregano For seasoning.
  • 1/2 tsp black pepper To taste.
  • 1/2 tsp salt To taste.
  • 1 tsp parsley, chopped For garnish.
For the Grain Bowl
  • 1 cup cooked buckwheat or brown rice Use gluten-free buckwheat for gluten sensitivities.
  • 1 pieces avocado, sliced Adds creaminess.
  • 1 cup corn kernels Can be fresh or frozen.
  • 2 cups lettuce, chopped Fresh greens for crunch.
  • 4 pieces cherry tomatoes, halved For freshness.

Method
 

Preparation
  1. Coat the chicken drumsticks with olive oil, minced garlic, paprika, oregano, salt, and pepper.
  2. Preheat the oven to 400°F (200°C).
  3. Prepare the buckwheat or rice according to package instructions while the chicken is roasting.
  4. Slice the avocado, chop the lettuce, halve the cherry tomatoes, and warm the corn kernels.
Cooking
  1. Place the seasoned drumsticks on a baking sheet and roast for 35-40 minutes until golden-brown.
Assembly
  1. Layer the cooked buckwheat, roasted chicken, sliced avocado, corn, lettuce, and tomatoes in a bowl.
  2. Garnish with fresh parsley and serve.

Notes

Store leftovers in an airtight container for up to three days. For freezing, it lasts up to three months.
