- Grate the carrots until fine and vibrant.
- Roughly chop the fresh cilantro.
Mixing
- In a large bowl, combine all diced and sliced ingredients.
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
- Pour the dressing over the slaw and gently toss without mashing the mango.
- Cover and chill the slaw in the refrigerator for at least 30 minutes before serving.
Notes
Great as a side for grilled shrimp tacos, tangy barbecue chicken, or atop mixed greens. For best results, add dressing just before serving.
