  • 2 pieces ripe mangoes, peeled and diced Choose firm, ripe mangoes for best texture.
  • 1 piece red bell pepper, thinly sliced Select bright and shiny peppers.
  • 1 piece cucumber, thinly sliced Firm cucumber for crisp texture.
  • 1/4 cup red onion, thinly sliced Use in moderation for flavor.
  • 1 cup shredded carrots Freshly grated for best flavor.
  • 1/4 cup fresh cilantro, chopped Bright green and aromatic.
Dressing
  • 2 tablespoons lime juice Fresh is recommended for flavor.
  • 1 tablespoon olive oil Avocado oil can be used for richer taste.
  • to taste pinch salt Add gradually to avoid overpowering.
  • to taste pinch pepper Freshly ground for best flavor.

Method
 

Preparation
  1. Peel and dice the mangoes, avoiding overly soft spots.
  2. Thinly slice the red bell pepper, cucumber, and red onion.
  3. Grate the carrots until fine and vibrant.
  4. Roughly chop the fresh cilantro.
Mixing
  1. In a large bowl, combine all diced and sliced ingredients.
  2. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  3. Pour the dressing over the slaw and gently toss without mashing the mango.
  4. Cover and chill the slaw in the refrigerator for at least 30 minutes before serving.

Notes

Great as a side for grilled shrimp tacos, tangy barbecue chicken, or atop mixed greens. For best results, add dressing just before serving.
