  • 8 oz bacon, cut into halves Thick-cut bacon makes crispier wrappers but regular works too.
  • 1/2 cup teriyaki sauce Use a preferred bottled teriyaki or make a quick glaze.
  • Salt and pepper to taste Use salt sparingly—bacon and teriyaki already add salt.
  • Skewers or toothpicks (optional) To secure bacon wraps if needed.

Preparation
  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss the chicken pieces with teriyaki sauce until well coated. Let sit for 15–30 minutes for flavor.
  3. Wrap each chicken piece with a half slice of bacon and secure with a toothpick or skewer if needed.
  4. Place the bacon-wrapped chicken on a baking sheet lined with parchment paper or a wire rack.
  5. Sprinkle with salt and pepper.
Cooking
  1. Bake in the preheated oven for 20-25 minutes, or until bacon is crispy and chicken is cooked through (internal temp 165°F/74°C).
  2. Let bites rest for 3-5 minutes before serving.
Serving Suggestions
  1. Arrange on a platter with toothpicks, garnish with sesame seeds and sliced scallions.
  2. Serve with steamed rice, grilled vegetables, or a cabbage slaw.

Notes

For best results, cut uniform pieces for even cooking. To avoid soggy bacon, place bites on a wire rack to allow fat to drain. If bacon browns too fast, tent with foil for the last 5 minutes.
