Preparation
- Preheat oven to 400°F (200°C).
- In a bowl, toss the chicken pieces with teriyaki sauce until well coated. Let sit for 15–30 minutes for flavor.
- Wrap each chicken piece with a half slice of bacon and secure with a toothpick or skewer if needed.
- Place the bacon-wrapped chicken on a baking sheet lined with parchment paper or a wire rack.
- Sprinkle with salt and pepper.
Cooking
- Bake in the preheated oven for 20-25 minutes, or until bacon is crispy and chicken is cooked through (internal temp 165°F/74°C).
- Let bites rest for 3-5 minutes before serving.
Serving Suggestions
- Arrange on a platter with toothpicks, garnish with sesame seeds and sliced scallions.
- Serve with steamed rice, grilled vegetables, or a cabbage slaw.
Notes
For best results, cut uniform pieces for even cooking. To avoid soggy bacon, place bites on a wire rack to allow fat to drain. If bacon browns too fast, tent with foil for the last 5 minutes.
