Ingredients

Dry Ingredients
  • 2 cups all purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar optional, but recommended
  • 1 teaspoon salt
Wet Ingredients
  • 3/4 cup cold milk or buttermilk plus a splash more if needed
  • 6 tablespoons cold butter cut into small pieces
  • 1 tablespoon melted butter for brushing the tops, optional

Method

Preparation
  1. Preheat your oven to 425°F. Line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, stir together flour, baking powder, sugar, and salt.
  3. Add the cold butter pieces. Use your fingers or a fork to rub the butter into the flour until it resembles coarse crumbs, keeping some small butter bits visible.
  4. Pour in the cold milk or buttermilk and stir gently until no dry flour remains. If the mixture appears too dry, add a splash more milk.
  5. Lightly flour your countertop. Turn the dough out and pat it into a rectangle about 3/4 inch thick. Fold it in half and pat down, repeat this two more times.
  6. Cut biscuits using a round cutter or the rim of a glass, pressing straight down without twisting.
  7. Arrange the biscuits on the baking sheet close together for softer sides or spaced out for crispier edges.
  8. Bake for 12 to 15 minutes until the tops are golden. Brush with melted butter if desired.

Notes

For best results, keep the butter cold and avoid overmixing the dough. Biscuits are best served warm, but can be stored for later use. You can create variations by adding cheese, herbs, or spices to the base recipe.
