Ingredients
  

Meat Mixture
  • 1 lb Ground beef Use lean ground beef for a healthier option.
  • 1 can Corn Drained.
  • 1 tsp Garlic powder Add more to taste if preferred.
  • 1 tsp Onion powder Can be substituted with diced onions.
  • Salt Salt and pepper To taste.
Casserole Toppings
  • 1 bag Tater tots, frozen You can substitute with cauliflower tots for a low-carb option.
  • 1 can Cream of mushroom soup Can be replaced with a homemade or healthier version.
  • 1/2 cup Milk Whole or skim milk works.
  • 2 cups Cheese Use cheddar, Monterey Jack, or a blend.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned; drain excess fat.
  3. Add the corn, garlic powder, onion powder, salt, and pepper to the skillet, and stir to combine.
  4. In a separate bowl, mix the cream of mushroom soup and milk until smooth.
  5. Layer half of the tater tots in the bottom of a greased baking dish.
  6. Spread the meat mixture over the tater tots, then pour the soup mixture on top.
  7. Sprinkle the remaining tater tots over the soup mixture, followed by the cheese.
Cooking
  1. Bake in the preheated oven for about 30-35 minutes, or until the casserole is hot and bubbly.
  2. Let it cool for a few minutes before serving.

Notes

Pair with a simple green salad or steamed vegetables. For extra flavor, consider adding diced bell peppers or cooked onions to the meat mixture.
