- Heat a bit of oil in a large skillet over medium heat.
- Add diced chicken and cook until browned and cooked through.
- Add chopped onion, bell pepper, and garlic. Sauté until vegetables soften.
- Stir in Cajun seasoning and mix well to coat the chicken and vegetables.
- Add rice and chicken broth, then bring to a boil.
- Lower the heat, cover the skillet, and simmer until rice is tender, about 18–20 minutes.
- Stir in heavy cream and green onions, heat through, taste, and adjust seasoning.
- Serve warm in bowls and enjoy.
