  • 1 lb Chicken breast, Boneless skinless
  • 1 medium Bell pepper
  • 2 cloves Garlic
  • 2 tbsp Green onions
  • 1 medium Onion
  • 2 cups Chicken broth, Low-sodium
  • 1 cup White rice or jasmine rice, Long-grain
  • 2 tbsp Cajun seasoning, Store-bought or homemade
  • 1 cup Heavy cream

Method
 

Cooking
  1. Heat a bit of oil in a large skillet over medium heat.
  2. Add diced chicken and cook until browned and cooked through.
  3. Add chopped onion, bell pepper, and garlic. Sauté until vegetables soften.
  4. Stir in Cajun seasoning and mix well to coat the chicken and vegetables.
  5. Add rice and chicken broth, then bring to a boil.
  6. Lower the heat, cover the skillet, and simmer until rice is tender, about 18–20 minutes.
  7. Stir in heavy cream and green onions, heat through, taste, and adjust seasoning.
  8. Serve warm in bowls and enjoy.

Notes

This dish makes great leftovers; store in airtight containers in the fridge for up to 3 days.
