Preparation
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
Make the crust
- Cream together the softened butter and 1 cup sugar until smooth.
- Mix in 2 cups flour and 1/2 teaspoon salt until well combined, then press the mixture into the bottom of the prepared baking dish.
Pre-bake the crust
- Bake in the preheated oven for 15–20 minutes or until lightly golden.
Prepare the filling
- In another bowl, whisk together the eggs, 1 cup sugar, lemon juice, 1/4 cup flour, and baking powder.
- Pour the filling over the pre-baked crust.
Bake again
- Bake for an additional 20–25 minutes until the filling is set.
Cool and dust
- Let cool before dusting with powdered sugar and cutting into squares.
Notes
Store in an airtight container in the fridge for up to 5 days or freeze individual squares for up to 3 months. Dust with powdered sugar just before serving for the best look.
