Ingredients
  

For the crust
  • 1 cup unsalted butter, softened Use room temperature for easy mixing.
  • 1 cup granulated sugar For crust.
  • 2 cups all-purpose flour For crust.
  • 1/2 teaspoon salt
For the filling
  • 4 large eggs Use room temperature for better emulsification.
  • 1 cup granulated sugar For filling.
  • 1/2 cup freshly squeezed lemon juice About 2–3 lemons.
  • 1/4 cup all-purpose flour For filling.
  • 1 teaspoon baking powder
  • Powdered sugar For dusting.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
Make the crust
  1. Cream together the softened butter and 1 cup sugar until smooth.
  2. Mix in 2 cups flour and 1/2 teaspoon salt until well combined, then press the mixture into the bottom of the prepared baking dish.
Pre-bake the crust
  1. Bake in the preheated oven for 15–20 minutes or until lightly golden.
Prepare the filling
  1. In another bowl, whisk together the eggs, 1 cup sugar, lemon juice, 1/4 cup flour, and baking powder.
  2. Pour the filling over the pre-baked crust.
Bake again
  1. Bake for an additional 20–25 minutes until the filling is set.
Cool and dust
  1. Let cool before dusting with powdered sugar and cutting into squares.

Notes

Store in an airtight container in the fridge for up to 5 days or freeze individual squares for up to 3 months. Dust with powdered sugar just before serving for the best look.
