Ingredients

  • 8 oz Tortilla chips — sturdy, restaurant-style
  • 1 lb Shrimp — peeled and deveined (medium or large)
  • 1 cup Cheddar cheese — shredded
  • 1 tbsp Olive oil
  • 1 tbsp Chili powder
  • 1 tsp Garlic powder
  • 0.5 tsp Salt
  • 1 tbsp Lime juice
  • 1 medium Avocado — diced
  • 0.5 cup Sour cream
  • 0.25 cup Fresh cilantro — chopped

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss shrimp with olive oil, chili powder, garlic powder, and salt.
  3. Spread tortilla chips in a single layer on a baking sheet.
Assembly
  1. Top chips with seasoned shrimp and shredded cheese.
Cooking
  1. Bake in the oven for about 10 minutes, until cheese is melted and shrimp is cooked through.
  2. Remove from oven and squeeze lime juice over the top.
Garnishing
  1. Garnish with diced avocado, sour cream, and chopped cilantro.
Serving
  1. Serve immediately and enjoy!

Store leftover nachos in an airtight container in the fridge for up to 2 days. Keep toppings like avocado and sour cream separate to avoid browning and sogginess.
