  • 1 lb ground beef Use lean ground beef for less fat.
  • 1 can black beans Drained and rinsed.
  • 1 can kidney beans Drained and rinsed.
  • 1 can corn Drained.
  • 1 can diced tomatoes Diced variety with basil or oregano works well.
  • 1 packet taco seasoning Choose reduced-sodium if desired.
  • 1 cup beef broth Use low-sodium for better control of salt.
  • Salt and pepper To taste.
Optional Toppings
  • sour cream For a creamy contrast.
  • shredded cheese Cheddar or your choice.
  • chopped cilantro Fresh for garnish.

Method
 

Preparation
  1. Heat a large pot over medium heat. Add the ground beef and break it into pieces. Cook until no pink remains and small brown bits form.
  2. Pour in black beans, kidney beans, corn, and diced tomatoes with their juices. Stir to combine.
  3. Sprinkle in the taco seasoning. Pour in the beef broth and stir.
  4. Increase heat until the liquid bubbles, then lower to a gentle simmer for 15–20 minutes. Stir occasionally.
  5. Taste and add salt and pepper to balance flavors. Ladle into bowls. Top with optional toppings if desired.

Notes

For different styles, pair soup with tortilla chips, sliced avocado, and lime wedges. Allow customizations for toppings to enhance flavor.
