  1. Cut the chicken breasts into strips, ensuring uniform size for even cooking.
  2. Season the chicken with fajita seasoning, salt, and pepper.
Cooking
  1. Heat olive oil in a skillet over medium-high heat until shimmering.
  2. Add the chicken strips and cook until browned and fully cooked through, about 5-7 minutes.
  3. Once the chicken is done, toss in sliced bell pepper and onion and sauté until they soften, about 3-4 minutes.
  4. Stir in the cooked pasta and queso, mixing well to ensure every piece is coated.
  5. Allow it to heat through for a few minutes to meld the flavors.
  6. Finally, top with melted cheese and serve hot.

Notes

For a spicy version, add sliced jalapeños when sautéing the vegetables. For a lighter meal, substitute traditional pasta with zucchini noodles or whole wheat pasta. This recipe keeps well in the fridge for about 3-4 days and can be frozen for up to 2 months.
