Preparation
- Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust them lightly with cocoa powder to prevent sticking.
- Melt chocolate and butter in a microwave-safe bowl or over a double boiler. Stir until smooth and combine completely, then let it cool slightly.
- Whisk eggs, egg yolks, and sugar in a separate bowl until thick and pale, about 3-5 minutes of vigorous whisking.
- Pour the melted chocolate mixture into the egg mixture, gently folding it in. Add vanilla extract and salt to enhance the flavors.
- Sift flour over the chocolate mixture and fold it in until just combined, being careful not to overmix.
- Distribute the batter evenly among the prepared ramekins, filling each about 2/3 full, leaving space for the cakes to rise.
Baking
- Bake for 12-14 minutes, until the edges are firm but the center still jiggles slightly. The tops should look set and slightly puffed.
- Let them cool for 1 minute before inverting onto a serving plate. Serve immediately for the best molten experience.
Notes
Use high-quality chocolate to affect the taste; choose at least 60% cacao. Don't overbake to achieve that gooey center. Experiment with filling by trying caramel or a chocolate hazelnut spread.
