Marination
- In a large bowl, rub the lamb chops with olive oil, minced garlic, chopped rosemary, thyme, paprika, salt, and pepper. Allow them to marinate for 30 minutes.
Potato Preparation
- Toss the potato wedges with olive oil, garlic powder, paprika, salt, and pepper. Spread them on a baking sheet and roast at 425°F (220°C) for 35–40 minutes, turning them halfway through.
Garlic Butter Preparation
- In a bowl, mix the softened butter with the minced garlic, chopped parsley, and rosemary until smooth.
Cooking the Lamb
- Grill or sear the marinated lamb chops in a preheated skillet for 3–4 minutes per side until caramelized.
Serving
- Arrange the lamb chops, roasted potato wedges, fresh salad, and roasted cherry tomatoes on a serving plate.
Notes
For a dairy-free option, substitute butter with olive oil. Store leftovers in the fridge for up to 3 days, or freeze for up to 3 months. Always let lamb rest after cooking for moister meat.
