Preparation
- Heat the oven to 400°F (or 425°F if your oven runs cool).
- Pat the cod dry and place in a lightly greased baking dish or on parchment.
- Melt the butter in a small pan or microwave-safe bowl, then stir in minced garlic, lemon zest, a squeeze of lemon juice, salt, and pepper. Optionally, add chili flakes.
Cooking
- Spoon the garlic butter over the fish and roast for about 10 to 14 minutes, depending on thickness.
- Check if the cod flakes easily with a fork; if so, it’s done.
- Sprinkle with parsley or chives and an additional squeeze of lemon right before serving.
Notes
Serve with extra garlic butter sauce on the side. Leftovers can be stored in an airtight container and refrigerated for up to 2 days.
