Ingredients

Cabbage Steaks
  • 1 Head Cabbage Choose a firm head with tight, crisp leaves
  • 3/4 tsp Garlic powder Provides a milder garlic flavor
  • 1/2 tsp Paprika, smoked Gives a warm, smoky flavor
  • 1/4 tsp Salt Adjust to taste
  • 1 tsp Black pepper, freshly ground Add to taste
  • 3 tbsp Olive oil Use extra-virgin for flavor
  • 1 Lemon Lemon, wedges To add a fresh pop of flavor before serving

Method

Preparation
  1. Preheat the oven to 425°F (220°C). Ensure the oven is fully hot before placing the cabbage in.
  2. Slice the cabbage into thick "steaks" by removing loose outer leaves, cutting the head in half through the core, and then cutting each half into 1 to 1.5-inch thick slices.
  3. In a bowl, combine olive oil, garlic powder, smoked paprika, salt, and black pepper, whisking until well mixed.
Roasting
  1. Brush both sides of the cabbage steaks with the oil mixture, making sure the edges are coated.
  2. Place the cabbage steaks on a baking sheet lined with parchment paper, ensuring there is space between each steak.
  3. Roast in the oven for 25-30 minutes, flipping halfway through, until the cabbage is tender and golden brown.
Serving
  1. Serve the cabbage steaks with lemon wedges for squeezing over the top.
