Preparation
- In a large mixing bowl, combine warm milk, sugar, and yeast. Let it sit for about 5-10 minutes until foamy.
- Add melted butter, eggs, and salt to the yeast mixture. Stir until fully combined.
- Gradually add flour, mixing until a dough forms. Add more flour if it's too sticky.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover, and let it rise in a warm place for 1-2 hours until doubled.
Frying
- Once risen, punch down the dough and roll it out to 1/2-inch thickness. Cut out circles.
- Place a spoonful of jam in the center of half the circles, top with others, and pinch to seal.
- Let the filled doughnuts rise for another 30 minutes while heating oil to 350°F (175°C).
- Fry each Berliner until golden brown, about 3-4 minutes on each side. Drain on paper towels.
- Dust with powdered sugar and serve warm.
Notes
Ensure freshness of yeast for proper rising. Knead thoroughly to develop gluten.
