For the toast
  • 2 slices sourdough bread Opt for thick, crusty sourdough.
For the avocado spread
  • 2 ripe avocados Choose avocados that yield gently to pressure.
  • 1 tbsp lemon juice Keeps avocado vibrant and adds zest.
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
For the eggs
  • 4 soft-boiled eggs Cook for 6-7 minutes for runny yolks.
For garnishing
  • 1 tsp olive oil Drizzle for flavor.
  • 1/2 tsp chili flakes Adjust to taste.
  • 1 tsp sesame seeds Optional for garnish.

Method
 

Preparation
  1. Toast the sourdough bread until it turns golden brown and crispy.
  2. In a bowl, mash the ripe avocados with lemon juice, sea salt, and black pepper until smooth.
  3. Soft-boil the eggs for 6-7 minutes, then plunge into cold water to stop cooking.
Assembly
  1. Spread the mashed avocado generously over the toasted bread.
  2. Slice the soft-boiled eggs in half and place them gently on the avocado toast.
  3. Sprinkle chili flakes, black pepper, and sea salt over the dish.
  4. Drizzle with olive oil and sprinkle sesame seeds on top, if using.

Notes

Best served fresh. Can prepare avocado mixture the night before for a quick morning assembly.
