Preparation
- Toast the sourdough bread until it turns golden brown and crispy.
- In a bowl, mash the ripe avocados with lemon juice, sea salt, and black pepper until smooth.
- Soft-boil the eggs for 6-7 minutes, then plunge into cold water to stop cooking.
Assembly
- Spread the mashed avocado generously over the toasted bread.
- Slice the soft-boiled eggs in half and place them gently on the avocado toast.
- Sprinkle chili flakes, black pepper, and sea salt over the dish.
- Drizzle with olive oil and sprinkle sesame seeds on top, if using.
Notes
Best served fresh. Can prepare avocado mixture the night before for a quick morning assembly.
