  • 1/2 piece cucumber, sliced Use fresh cucumbers.
  • 1/4 piece red onion, sliced
  • 1 cup carrot sticks
Seasoning and oil
  • 2 tablespoons olive oil Can use olive oil spray for a lighter option.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning

Method
 

Preparation
  1. Preheat the grill.
  2. Coat the chicken breasts with olive oil and sprinkle a mix of garlic powder, paprika, salt, and black pepper.
  3. Preheat the oven to 425°F (220°C) and prepare a baking sheet.
Cooking
  1. Lay out the sweet potato fries on the baking sheet, drizzle with olive oil, and sprinkle with salt and Italian seasoning. Roast until golden brown and crispy, about 25-30 minutes.
  2. Grill the chicken for about 6-7 minutes on each side or until fully cooked and has grill marks.
Assembling the Salad
  1. In a large bowl, mix together the lettuce, cucumber, carrot sticks, and red onion.
