  • 1 tbsp olive oil For brushing the sausages.

  • 1/2 tsp black pepper

  • 2 tbsp vegetable oil For tossing the fries.
  • 1 tsp paprika
  • to taste Salt To taste.
Creamy Potato Salad
  • 4 medium potatoes, boiled and diced
  • 1/2 cup mayonnaise Can substitute with Greek yogurt for a lighter option.
  • 2 tbsp sour cream
  • 2 tbsp chopped pickles
  • 1 tbsp mustard
  • 1 cup cherry tomatoes, halved
  • 1 tbsp fresh parsley, chopped

Method

Preparation of Fries
  1. Preheat your oven or air fryer to 425°F. Toss the sliced potatoes in a bowl with vegetable oil, paprika, garlic powder, and salt. Spread them on a baking sheet, ensuring they have enough space to crisp up. Bake until golden and crispy, about 25-30 minutes.
Making the Potato Salad
  1. In a large bowl, combine the boiled, diced potatoes with chopped hard-boiled eggs, mayonnaise, sour cream, chopped pickles, mustard, and green onions. Season well. Mix gently to combine; chill in the refrigerator until serving.
Grilling the Sausages
  1. Brush each sausage with olive oil. Preheat your grill to medium-high and place the sausages on it. Grill until they are nicely browned and have dark grill marks, turning occasionally, usually around 6-8 minutes.
Preparing the Tomatoes
  1. In a small bowl, toss the halved cherry tomatoes with a pinch of salt and chopped parsley. Let them sit to enhance their flavor.
Assembling the Plate
  1. On a serving platter, arrange the grilled sausages, crispy fries, creamy potato salad, and seasoned cherry tomatoes. Garnish with additional parsley.

Notes

For serving, consider adding coleslaw for crunch, pickled vegetables for tang, or a chilled beverage like lemonade. Store leftovers in an airtight container in the fridge for 3-4 days or freeze separately for up to 2 months.
