  • 1 cup breadcrumbs helps bind the meatloaf and gives it structure
  • 1 large onion, diced adds sweetness and depth to the flavor
  • 2 cloves garlic, minced infuses a fragrant aroma
  • 2 large eggs binds the mixture and enhances the texture
  • 1 tsp salt enhances all the flavors
  • 1 tsp pepper adds a slight kick
  • 1 tsp paprika introduces a mild heat and smokiness
  • 1 tbsp fresh parsley, chopped brings a fresh element to the dish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a loaf pan lightly to prevent sticking.
  2. In a skillet, sauté the diced onion in a bit of oil over medium heat until translucent, about 5 minutes.
  3. In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, sautéed onion and garlic, eggs, salt, pepper, paprika, and parsley. Mix until just combined; avoid overmixing to keep the meatloaf tender.
  4. Shape the mixture into a loaf and place it in the prepared loaf pan.
Cooking
  1. Bake for about 1 hour, or until the internal temperature reaches 160°F (70°C).
  2. Let the meatloaf rest for 10 minutes before slicing.
Serving
  1. Serve with your choice of sides like mashed potatoes or roasted vegetables.

Notes

For best results, add a dash of Worcestershire sauce or mustard for an extra kick, and baste with ketchup and Worcestershire sauce during the last 15 minutes of baking. Always let your meatloaf rest before slicing.
