  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning

  • 1 tablespoon fresh parsley, chopped
For the Corn Rice
  • 2 cups cooked jasmine rice Alternatively, can use any long-grain rice or quinoa.
  • 1/2 cup sweet corn Brightens the dish with color and sweetness.
  • 1 tablespoon butter Can substitute with a vegan alternative.
For the Veggies
  • 1 cup broccoli florets Steam until bright green and tender.
  • 2 pieces carrots, grated For the creamy slaw.
  • 2 tablespoons mayonnaise or Greek yogurt For slaw; can use a vegan alternative.
  • 2 cloves garlic, minced

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) to ensure even roasting.
  2. Season the chicken with olive oil, paprika, garlic powder, Italian seasoning, salt, and black pepper.
  3. Place the seasoned chicken in a baking dish.
Roasting
  1. Roast the chicken in the oven for 35-40 minutes, until golden brown and cooked through.
Making Corn Rice
  1. In a bowl, combine cooked jasmine rice, butter, sweet corn, and parsley. Mix until butter melts and coats the rice.
Preparing Veggies
  1. In another bowl, mix grated carrots with mayonnaise or yogurt for a creamy slaw.
  2. Steam the broccoli until it's bright green and tender, then toss with mayonnaise or yogurt.
Serving
  1. Arrange the roasted chicken on a plate with corn rice, creamy carrot slaw, and broccoli.

Notes
