Ingredients
  

Dough Ingredients
  • 2 cups all-purpose flour Freshly stored in a cool, dry place.
  • 1/4 cup granulated sugar For sweetness.
  • 1 packet active dry yeast (about 2 1/4 teaspoons) Check expiration date.
  • 1/2 cup warm milk Should be at about 100–110°F.
  • 1/4 cup butter, melted Unsalted is best.
  • 1 large egg Provides richness.
  • 1/2 teaspoon salt Essential for flavor.
  • Vegetable oil for frying Enough for donuts to float.
Filling and Topping
  • 1 cup jelly or jam of your choice A thick, high-fruit-content jam is ideal.
  • 1/4 cup powdered sugar For dusting.

Method
 

Proof the Yeast
  1. Mix warm milk with the yeast; let sit for about 5 minutes until frothy.
Mix Dry Ingredients
  1. In a large bowl, combine flour, sugar, and salt.
Combine Wet and Dry
  1. Add yeast mixture, melted butter, and egg to the dry ingredients; mix until a shaggy dough forms.
Knead the Dough
  1. On a floured surface, knead dough for 5–10 minutes until smooth and elastic.
First Rise
  1. Place dough in a greased bowl, cover, and let rise in a warm spot for about 1 hour or until doubled.
Shape and Fill
  1. Punch down dough, roll to 1/2 inch thickness, cut rounds, fill half with jelly, top with another round, and seal edges.
Heat Oil
  1. Heat oil to 350°F (175°C) in a deep pan.
Fry Donuts
  1. Fry donuts for 2–3 minutes per side until golden brown.
Drain and Finish
  1. Remove donuts to paper towels and dust with powdered sugar while they are still warm.
Serve
  1. Let cool slightly then serve warm for best texture.
