Ingredients

Dough Ingredients
  • 2 cups all-purpose flour Gives spaetzle its signature chewiness.
  • 3 large eggs Adds richness and binds the ingredients.
  • 1/2 cup milk For a lighter texture.
  • 1 teaspoon salt Enhances the flavor.
  • 1/4 teaspoon nutmeg Provides a hint of warmth that complements the dough.
  • Butter for sautéing Helps achieve that golden finish.

Method

Preparation
  1. In a large mixing bowl, combine the flour and salt. Create a well in the center and crack in the eggs, adding the milk gradually. Stir until combined; the mixture should be thick yet pliable.
  2. Bring a large pot of salted water to a rolling boil. Reduce to a simmer.
Cooking
  1. Using a spaetzle maker or colander, press the dough through the holes over the boiling water. The pieces should fall into the pot and cook for about 2-3 minutes, or until they rise to the top.
  2. Once cooked, use a slotted spoon to transfer the spaetzle to a colander and let them drain.
Sautéing
  1. In a skillet, melt 2 tablespoons of butter over medium heat. Add the cooked spaetzle, tossing them until they are golden and slightly crispy, about 5 minutes.
  2. Serve hot, garnished with fresh herbs if desired.

Notes

Consistency is Key: If the dough feels too thick, add a splash of milk. Don’t Overcrowd the Pot: Cooking spaetzle in batches prevents them from sticking together. Experiment with Flavor: Add fresh herbs or cheese directly into the dough for an extra layer of taste. Even a sprinkle of garlic powder can take it to new heights.
