Preparation
- Preheat the oven to 350°F (175°C). Grease a mini muffin tin.
- In a mixing bowl, whisk together the eggs and honey until combined.
- Add the melted butter and buttermilk, mixing well.
- In a separate bowl, combine the all-purpose flour, cornmeal, baking powder, salt, and sugar.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fill each muffin cup about 3/4 full with the batter.
Baking
- Bake for 15-20 minutes or until golden brown and a toothpick inserted comes out clean.
- Allow to cool slightly before serving.
Notes
Serve warm with melted butter and extra honey. Can be paired with chili or used as a brunch item.
