Ingredients
  

Wet Ingredients
  • 2 pieces Eggs Use fresh eggs for best flavor.
  • 1/4 cup Honey Use pure honey for clean taste.
  • 1/2 cup Butter Unsalted butter, melted.
  • 1 cup Buttermilk Warm buttermilk for better mixing.
Dry Ingredients
  • 1 cup All-purpose flour Measure correctly to avoid dense batter.
  • 1 cup Cornmeal Medium grind for a pleasing texture.
  • 1 tbsp Baking powder Ensure it's fresh for a good rise.
  • 1/2 tsp Salt
  • 1/4 cup Sugar Can reduce for lower sweetness.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a mini muffin tin.
  2. In a mixing bowl, whisk together the eggs and honey until combined.
  3. Add the melted butter and buttermilk, mixing well.
  4. In a separate bowl, combine the all-purpose flour, cornmeal, baking powder, salt, and sugar.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Fill each muffin cup about 3/4 full with the batter.
Baking
  1. Bake for 15-20 minutes or until golden brown and a toothpick inserted comes out clean.
  2. Allow to cool slightly before serving.

Notes

Serve warm with melted butter and extra honey. Can be paired with chili or used as a brunch item.
