Ingredients
  

For the Chicken and Sauce
  • 1 5 oz chicken breast (grilled, sliced) Look for organic for fresher flavor.
  • 2 tbsps honey dijon BBQ sauce Homemade sauce enhances flavor.
For the Bowl
  • 1 cup riced cauliflower (cooked) Steam until tender but not mushy.
  • 1/2 cup baby spinach Fresh for added color.
  • 1/2 red pepper diced Adds crunch and vibrant color.
  • 1/4 cup black beans (if using canned, drain and rinse) Use dried beans for fresher taste.
  • 1/4 cup corn (if using canned, drain and rinse) Enhances sweetness and texture.
  • 1 tsp Flavor God Fiesta Sweet and Tangy Seasoning Optional for added flavor.

Method
 

Prepare the BBQ Sauce
  1. In a medium bowl, whisk together 1 cup of Dijon mustard, 1/2 cup of honey, and 1/2 cup of apple cider vinegar. Aim for a slightly chunky texture.
Season and Grill the Chicken
  1. Coat the chicken breast with the BBQ sauce and let it marinate for at least 10 minutes.
  2. Preheat the grill to medium heat and grill the chicken for 6-8 minutes on each side until golden brown.
Cook the Riced Cauliflower
  1. In the microwave, steam the riced cauliflower for about 5 minutes until tender.
Prep the Vegetables
  1. Dice the red pepper and rinse the black beans and corn.
Assemble Your Bowls
  1. Start with a base of riced cauliflower, then layer with grilled chicken, red pepper, baby spinach, black beans, and corn.

Notes

Store in an airtight container in the fridge for up to 4 days. For longer storage, freeze for up to 3 months. Reheat in the microwave for about 2 minutes.
