Prepare the BBQ Sauce
- In a medium bowl, whisk together 1 cup of Dijon mustard, 1/2 cup of honey, and 1/2 cup of apple cider vinegar. Aim for a slightly chunky texture.
Season and Grill the Chicken
- Coat the chicken breast with the BBQ sauce and let it marinate for at least 10 minutes.
- Preheat the grill to medium heat and grill the chicken for 6-8 minutes on each side until golden brown.
Cook the Riced Cauliflower
- In the microwave, steam the riced cauliflower for about 5 minutes until tender.
Prep the Vegetables
- Dice the red pepper and rinse the black beans and corn.
Assemble Your Bowls
- Start with a base of riced cauliflower, then layer with grilled chicken, red pepper, baby spinach, black beans, and corn.
Notes
Store in an airtight container in the fridge for up to 4 days. For longer storage, freeze for up to 3 months. Reheat in the microwave for about 2 minutes.
