  • 1/2 cup unsalted butter (melted and slightly cooled)
  • 1 cup granulated sugar
  • 2 large eggs (room temperature if you can)
  • 2 teaspoons vanilla extract
  • 1/3 cup unsweetened cocoa powder See notes for cocoa type variations.
  • 1/2 cup all-purpose flour (spooned and leveled)
  • 1/4 teaspoon fine salt
  • 1/2 cup chopped dark chocolate or chocolate chips (optional but highly recommended)

Preparation
  1. Heat oven to 350°F. Grease or line an 8-inch square pan with parchment.
  2. Whisk melted butter and sugar until glossy and thick, about 1 minute.
  3. Whisk in eggs and vanilla until the mixture looks slightly lightened and smooth.
  4. Sift in cocoa, flour, and salt. Stir just until combined. Do not overmix.
  5. Fold in chopped chocolate. Spread into pan and smooth the top.
Baking
  1. Bake for 20 to 24 minutes, until the center is set but still soft. A toothpick should come out with a few moist crumbs.
  2. Cool at least 20 minutes before slicing for extra gooey squares.

Notes

If using a 9-inch pan, reduce baking time as the batter will be thinner. For thicker brownies, double the recipe.
