Preparation
  1. In a mixing bowl, combine the flour and salt. Make a well in the center and add eggs and milk. Mix until you achieve a smooth batter that should be a bit thicker than pancake batter.
  2. In a large pot, bring salted water to a rolling boil.
Cooking
  1. Using a spätzle maker or a colander, push the batter through to form noodle shapes directly into the boiling water. This process can be a fun, hands-on experience!
  2. Allow the noodles to cook for 2-4 minutes or until they float to the surface, signaling they are ready. Remove them with a slotted spoon and drain.
  3. In a skillet, melt some butter and add thinly sliced onions. Cook over medium heat until caramelized, about 10 minutes.
Layering
  1. In a greased baking dish, layer half of the cooked noodles, then sprinkle half of the cheese. Repeat the layers one more time.
  2. Top with additional butter and bake at 350°F for about 20 minutes until the cheese is bubbling and golden.
Serving
  1. Garnish with freshly chopped chives if desired, and enjoy this authentic dish!

Notes

Let the batter rest for about 20 minutes for better texture. Use cold eggs from the refrigerator to help the noodles firm up nicely. Experiment with different cheeses for flavor variety.
